Step-by-step
- 1Mash 1 ripe banana in a bowl until smooth.
- 2Whisk in 1 egg, 120ml milk, then fold in 100g flour until just combined.
- 3Melt a little butter in a non-stick pan over medium-low heat.
- 4Spoon small rounds of batter into the pan; cook 2 min until bubbles form, then flip.
- 5Cook 1 more min until golden. Stack on a plate and serve warm.
Adapt for a picky eater
- ·Make it milder: skip strong spices, herbs and onions — keep salt, butter or a touch of cheese instead.
- ·Swap an ingredient: trade anything they avoid for a safe favourite (e.g. cucumber sticks instead of cooked veg).
