  • Cauliflower
  • Cheddar
  • Butter
  • Flour
  • Milk

Step-by-step

  1. 1Preheat oven to 200°C (400°F).
  2. 2Break 1 cauliflower into small florets and boil 6 min until tender; drain.
  3. 3Melt 30g butter, stir in 30g flour, cook 1 min, then whisk in 300ml milk until smooth.
  4. 4Off heat, stir in 100g grated cheddar.
  5. 5Place cauliflower in a dish, pour sauce over and bake 15 min until bubbling and golden.

Adapt for a picky eater

  • ·Make it milder: skip strong spices, herbs and onions — keep salt, butter or a touch of cheese instead.
  • ·Swap an ingredient: trade anything they avoid for a safe favourite (e.g. cucumber sticks instead of cooked veg).
  • ·Keep things separate: serve the parts side by side, not mixed — sauce on the side.
  • ·Simplify: a smaller portion of just two or three familiar parts of the dish is a win.
