Step-by-step

  1. 1Whisk 4 eggs with a pinch of salt.
  2. 2Melt 1 tbsp butter in a non-stick pan over low heat. Add eggs.
  3. 3Stir gently with a spatula until just set, then fold in 30g grated cheddar.
  4. 4Toast and butter 2 slices of bread, cut into soldiers. Pile eggs alongside.

Adapt for a picky eater

  • ·Make it milder: skip strong spices, herbs and onions — keep salt, butter or a touch of cheese instead.
  • ·Swap an ingredient: trade anything they avoid for a safe favourite (e.g. cucumber sticks instead of cooked veg).
