- Cream
- Butter

Step-by-step
- 1Melt 1 tbsp butter in a pot. Pour in 500ml passata and 250ml water. Simmer 10 min.
- 2Stir in 100ml cream and a pinch of salt. Blend smooth with a stick blender if needed.
- 3Butter 4 slices of bread, top with grated cheddar and grill 3 min until melted and golden.
- 4Slice toast into soldiers.
- 5Ladle soup into bowls and serve toast on the side for dipping.

- ·Make it milder: skip strong spices, herbs and onions — keep salt, butter or a touch of cheese instead.
