  • Tomato passata
  • Cream
  • Butter
  • Bread
  • Cheddar

Step-by-step

  1. 1Melt 1 tbsp butter in a pot. Pour in 500ml passata and 250ml water. Simmer 10 min.
  2. 2Stir in 100ml cream and a pinch of salt. Blend smooth with a stick blender if needed.
  3. 3Butter 4 slices of bread, top with grated cheddar and grill 3 min until melted and golden.
  4. 4Slice toast into soldiers.
  5. 5Ladle soup into bowls and serve toast on the side for dipping.

Adapt for a picky eater

  • ·Make it milder: skip strong spices, herbs and onions — keep salt, butter or a touch of cheese instead.
  • ·Swap an ingredient: trade anything they avoid for a safe favourite (e.g. cucumber sticks instead of cooked veg).
