- 1Use 3 cups cold cooked rice (day-old works best).
- 2Heat 1 tbsp oil in a wok or large pan over high heat.
- 3Beat 2 eggs and pour in. Scramble quickly, then push to the side.
- 4Add 1/2 cup frozen peas and the rice. Stir-fry 3–4 min, breaking up clumps.
- 5Drizzle in 1 tbsp soy sauce, toss to combine, and serve.

- ·Make it milder: skip strong spices, herbs and onions — keep salt, butter or a touch of cheese instead.
- ·Swap an ingredient: trade anything they avoid for a safe favourite (e.g. cucumber sticks instead of cooked veg).
